Wagyu Burger vs Pork Burger

For a beef-focused cheeseburger, I choose Wagyu. For a burger with apple slaw and mustard, I choose pork. Both come as two 150g patties, so the choice is about the flavour you want and how you build the bun.

What changes on the plate?

The Wagyu burger gives you the beef flavour at the centre of a classic cheeseburger. Pork takes the meal in a different direction. I like its flavour with apple, cabbage and cider vinegar, rather than simply copying every topping from the beef burger. Both can make a satisfying burger; the toppings should suit the meat.

My topping choices

With Wagyu I use cheddar, pickles, lettuce and a little mustard mayonnaise. If I add bacon, I keep the sauce restrained. With pork I use a crisp apple slaw and drain it before filling the bun. Too much wet slaw makes a good patty difficult to eat. Toasting the cut faces of the bun helps either version.

Does Wagyu mean I should serve it rare?

These are minced-meat patties, so I cook both Wagyu and pork burgers through using the centre-temperature check in the linked guide. I do not use steak doneness rules for a burger. Avoid pressing the patties flat as they cook; that pushes their juices into the pan. Thaw in the refrigerator and use a hot pan with enough control to finish the centre without burning the outside.

Choosing for a mixed BBQ

Each current pack contains two 150g patties. For a small group, offering both lets people choose beef or pork without changing the bun size. Keep toppings in separate bowls and use clean utensils for cooked patties.
