Tallow Roast Potatoes, Carrots & Chickpeas

Ingredients

  • 40g Wagyu Beef Tallow
  • 800g potatoes, cut into 4cm pieces
  • 400g carrots, cut into thick batons
  • 1 tin chickpeas (400g), drained and dried
  • 1 tsp dried rosemary
  • 150g plain yogurt
  • 1 tbsp lemon juice
  • Salt and black pepper

Make the meal

  1. Heat oven to 200°C fan / 220°C conventional. Simmer potatoes in salted water for 8–10 minutes, drain and steam dry. Shake gently to roughen the edges.
  2. Melt 40g tallow in a large roasting tray for 2 minutes. Carefully turn the dry potatoes, carrots and chickpeas in the hot fat. Roast for 40–50 minutes, turning twice, until the potatoes are tender and crisp.
  3. Mix yogurt with lemon juice. Serve the roast potatoes, carrots and chickpeas in bowls with the yogurt on the side.

Tallow Mushroom & Chickpea Rice Bowls

Ingredients

  • 25g Wagyu Beef Tallow
  • 280g dry rice
  • 500g mushrooms, quartered
  • 1 onion, sliced
  • 2 tins chickpeas (400g each), drained
  • 200g spinach
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice

Make the meal

  1. Cook rice according to its packet. Melt 25g tallow in a wide pan over medium-high heat. Fry mushrooms in two batches for 6–8 minutes per batch, until browned; remove to a plate.
  2. In the same pan, soften the onion for 5 minutes. Add chickpeas and 3 tbsp water, cover for 4 minutes. Add spinach and stir until wilted.
  3. Return the mushrooms, add soy sauce and lemon juice, and toss for 1 minute. Spoon over the hot rice.
