How to Cook Wagyu Ribeye Steak

Dry the surface, control the sear and check the centre.

For our Wagyu ribeye, I want a dry surface and controlled searing. The 250g weight is useful for portions, but thickness tells me much more about cooking time.

Thaw, dry and season

Thaw fully in the refrigerator. Remove the packaging and pat dry. Measure the thickness; the estimates here assume roughly 2–3cm. Season with salt shortly before cooking unless already seasoned. There is no need to leave the steak out for hours to reach room temperature.

Sear in a heavy pan

Heat a heavy pan over medium-high heat. Start with a very thin film of oil or a little beef tallow; a marbled steak releases fat of its own. Sear the first side for about 1–2 minutes, then turn. Continue turning every minute or so, reducing heat if the fat smokes heavily. Give the fat edge contact with the pan using tongs.

For a 2–3cm steak, begin probing at around 6 minutes; about 6–12 minutes overall is only a planning range. A thicker steak may need a gentle oven finish. On the BBQ, keep a cooler zone available and avoid flare-ups.

Doneness and safety

The standard safe minimum for a whole beef steak is 63°C followed by at least a three-minute rest. Culinary rare and medium-rare targets are lower than this; do not describe them as equally safe. Use the safe minimum for this customer guide and follow stricter label instructions, especially if the meat is tenderised or injected. Probe sideways into the centre.
