The oven is my choice when I need a whole tray ready together. Good spacing matters more than turning the temperature up.
Prepare the tray
Thaw the sausages in the refrigerator. Heat the oven to 180°C fan or 200°C conventional. Remove packaging, dry the links and arrange them in one layer on a shallow, rimmed metal tray. Rub with a little oil only if needed to prevent sticking. Avoid a deep dish that holds steam around them.
Roast evenly
Use the middle shelf and allow roughly 20–25 minutes for thawed links around 100g, turning halfway. Check earlier for thinner sausages. Rotate the tray if one side of the oven browns faster. For honey, maple or cheese-filled sausages, reduce the heat if the surface darkens before the centre is ready.
Finish with a thermometer
Check the thickest part of several links. Pork, beef and lamb sausages need at least 71.1°C (72°C on a whole-degree thermometer); poultry needs 74°C. Rest 2–3 minutes before serving.
Avoid these mistakes
Do not cover the tray for the whole cook if you want a browned casing. Do not assume the sausage at the edge and the one in the middle are ready together. For a quick finish, briefly use the top grill while watching constantly—but reach the safe centre temperature first.
Serve Classic Italian or Cumberland with roast vegetables, or slice fully cooked links into pasta. Use the frozen guide if the links have not thawed.
