How to Cook Wagyu Burgers

Develop a crust and manage the rendered fat.

Wagyu brings plenty of fat to the pan. I do not add a knob of butter at the start or keep pressing the patty. I want a good crust and a cooked centre, with the juices still in the burger.

Keep the patties cold

Thaw the 150g patties in the refrigerator, remove the separator and keep their shape. Check whether the pack is already seasoned before adding salt. Use a heavy pan with only a wiped film of oil, or a clean BBQ grate with a cooler zone available.

Develop the crust, then control the heat

Start at medium-high heat. Allow roughly 4–6 minutes per side for a thawed patty, adjusting for its thickness. Turn when a crust has formed; if it browns too quickly, lower the heat and turn again as needed. There is no rule that a burger may be flipped only once.

Let the fat render, but do not let it accumulate until it smokes. On the BBQ, move away from flare-ups. Never pour hot fat into the sink.

Check the ground beef

Probe sideways into the centre and reach at least 71.1°C (72°C on a whole-degree display). Wagyu's price and marbling do not change the ground-meat safety target. Rest about three minutes on a clean plate; do not rely on resting to finish an under-temperature burger.

I would add a slice of cheddar, cooked onions and pickles. Keep the sauce modest. Shop the 2 × 150g Wagyu patties and read the bacon guide if you are making a bacon cheeseburger.
