Our smoked sausages still need cooking. Texas Hot Links, Käsekrainer and Andouille may already look coloured, so I pay particular attention to the centre temperature.
Thaw and choose the method
Defrost in the refrigerator and dry the casing. Keep the links whole when cooking for a sandwich or BBQ plate. A little oil helps in a pan; an air fryer usually needs none.
Pan, oven or air fryer
In a heavy pan, use medium-low to medium heat and turn every 2–3 minutes. Allow roughly 15–20 minutes for substantial thawed links. In the oven, start at 180°C fan / 200°C conventional for about 20–25 minutes, turning halfway. In an air fryer, use 180°C for roughly 12–18 minutes, turning every five minutes. Sizes vary, so these are estimates rather than brand-specific tested timings.
For a BBQ, cook mainly over moderate indirect heat, then colour briefly over direct heat. Move away from flare-ups.
Cook through
Raw pork or beef sausage needs at least 71.1°C in the centre (72°C on a whole-degree thermometer). If a sausage includes poultry, use 74°C. Check the current ingredient label and more than one link. Rest 2–3 minutes after cooking.
Our smoked ribs, smoked chicken wings, smoked chicken thighs and smoked duck breast are fully cooked. Use their reheating guides; do not transfer those methods to these uncooked sausages.
